The trick to this mojito is really good flavorful mint and working hard to get all the flavor out from it. I love frozen mojitos because the mint gets processed, so in this version I muddle the mint really good in a mortar and pestle.

- 12 fresh mint leaves
- juice from 1 lime
- 1 tablespoon simple syrup
- 2 ounces of light rum
- top up with soda water if desired
Muddle your mint in a mortar and pestle or the bottom of your glass. Add the lime, simple syrup, rum and lots of crushed ice. Top off with soda water.
