Mint Brownies
This is a basic brownie recipe with chopped fresh mint added. It gives it a refreshing flavor and isn't overwhelming. I estimated the amount of mint in this. I've found getting the "single-serve" from the supermarket produce department is enough, but feel free to use more or less depending on your taste.

Ingredients
- 1 cup sugar
- 1/2 cup flour
- 1/4 cup oil
- 6 tablespoons cocoa powder
- 1/4 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla
- 1 tablespoon finely chopped fresh mint Using an electric chopper/food processor is best
Directions
Grease an 8×8 inch baking pan.
In medium bowl, stir together sugar, flour, cocoa and salt. Stir in oil and vanilla.
Add eggs one at time, beating well after each addition. Fold in chopped mint. Add in nuts and/or chocolate chips. Turn into prepared pan. Bake at 350 for about 20-25 minutes. Cut into 2 inch squares while still warm.
