Mini Triple-Chocolate Quick Breads

- 1/2 cup:margarine, softened
- 2/3 cup:brown sugar
- 2 :eggs
- 1 cup:semisweet chocolate chips, melted
- 1 1/2 cups:applesauce
- 2 teaspoons:vanilla
- 2 1/2 cups:flour
- 1 teaspoon:baking soda
- 1 teaspoon:baking powder
- 1/2 cup:miniature semisweet chocolate chips

- 1/2 cup:semisweet chocolate chips
- 1 tablespoon:margarine
- 2 to 3 tablespoons:non-dairy creamer
- 1-2 cup:powdered sugar
- 1/4 teaspoon:vanilla
Directions
Preparation
- Preheat oven to 350 degrees F.
- Cream together margarine and sugar. Beat in eggs and chocolate until well mixed. Add apple sauce and vanilla.
- On a low speed, beat in dry ingredients. Stir in chocolate chips.
- Spoon batter into 4 greased 5 1/2x3x2-inch mini-loaf pans.
- Bake for 35-40 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely.
- For glaze, melt chocolate chips and margarine in the microwave. Stir in non-dairy creamer, then sugar and vanilla. Drizzle over loaves.
