Mini Strata

After a hectic week of rushed mornings, why not take advantage of slow Sunday morning? Try cooking brunch together and devouring a gourmet meal that everyone helped create. Stratas may be the key. Get creative with your stratas!   Use six ounce ramekins to make personalized mini stratas with a variety of savory and sweet fillings: zucchini, sweet potato, pumpkin, pear, and apple.

6 Servings


  • 8 or 9 slices day old bread (about ½ pound)
  • 6 large eggs
  • 1¾ cup whole milk
  • Kosher salt

Zucchini Filling:

  • 1 tablespoon olive oil
  • 1 small onion, minced
  • 1 zucchini, sliced into ⅛-inch rounds
  • 1 cup shredded mozzarella cheese


ADULTS: Preheat oven to 275°F.
KIDS 4 and up: Cut bread into 1/2” inch cubes and place bread cubes on a rimmed baking sheet.
ADULTS: Bake until dry and crisp, about 40 minutes. Let them cool on the baking sheet. Turn oven up to 350°F.
KIDS 4 and up: Whisk together the eggs, milk, and 1 teaspoon of salt in a medium bowl. Set aside.
KIDS 10 and up: Heat 1 tablespoon of olive oil in a 10” skillet over medium heat.  Add minced onion and sauté until translucent. Add the zucchini, a pinch of salt, and continue to sauté until zucchini is cooked and slightly golden around the edges. Set aside.
KIDS 4 and up: Grease six 6-ounce ramekins with a tablespoon of butter.

Each family member can customize their own strata:

Place ramekins on a rimmed baking sheet lined with parchment paper or aluminum foil (the stratas may overflow). Place 1/4 cup (about 8 ) bread cubes into each of the six ramekins, then layer the stratas with 2 tablespoons of vegetable or fruit filling, sugar, spices, the cheese, and then the egg mixture. Gently press down each layer with your fingers.

More Filling Variations
Sweet potato strata: 2 tablespoons cooked and mashed sweet potato, 1 tablespoon ricotta, 1 teaspoon sugar.
Pumpkin strata:  2 tablespoons pumpkin puree, 1 teaspoon sugar, ¼ teaspoon cinnamon, 1 tablespoon ricotta.
Pear strata:  2 tablespoons sautéed pears, 1 tablespoon ricotta, 1 teaspoon sugar.
Apple strata: 2 tablespoons sautéed apples, 1 tablespoon ricotta, 1 teaspoon sugar.
