Mini Chocolate Coconut Sandwiches

Minis are great because you can enjoy just one without the guilt. (Or you can do what I do: eat seconds, thirds, and fourths of these bite-sized babies when no one is looking!) For pareve sandwiches, substitute non-dairy sorbet and pareve cookies and you are good to go.

Times

  • Prep Time : 15 min
  • Cook Time : 45 minutes chill time min
  • Ready Time : 1 hour

Servings

12 sandwiches

Ingredients

  • 24 double fudge chocolate cookies (2-inch)
  • 1 pint coconut ice cream or sorbet, slightly softened

Directions

Spread 2 tablespoons of ice cream on the flat side of 12 cookies. Top with remaining 12 cookies and freeze for at least 45 minutes. Can be made up to 3 days in advance. Individually wrap sandwiches in plastic wrap and store in the freezer until ready to eat.
