Mediterranean Chopped Salad

This is a chopped salad with olives. Make this during summer for a real treat.

Servings

Ingredients

  • 2 medium tomatoes, seeded and diced
  • 1 cup diced seedless cucumber (1/4 medium)
  • 1/4 cup chopped scallions
  • 1/4 cup coarsely chopped fresh parsley
  • 1/4 cup Kalamata olives, pitted and coarsely chopped
  • 2 tablespoon extra-virgin olive oil
  • 1 tablespoon white-wine vinegar
  • 1/4 teaspoon salt, or to taste
  • Freshly ground pepper to taste

Directions

  1. Combine tomatoes, cucumber, scallions, parsley, olives, oil, vinegar, salt and pepper in a medium bowl; toss gently to mix. Serve within 1 hour.

Per serving: 113 calories; 10 g fat (1 g saturated fat, 8 g mono unsaturated fat); 0 mg cholesterol; 5 g carbohydrates; 1 g protein; 1 g fiber; 328 mg sodium; 215 mg potassium
