Mediteranean Faux Fish Cutlets

Ingredients
- 2 boxes firm tofu
- .5 cup vital wheat gluten flour
- .5 cup whole wheat flour
- .5 cup falafel mix/chic pea flour
- 3 tablespoons vegetable soup mix/equivalant in varied spices
- .5 onion
- 3 cloves garlic
Directions
Blend the tofu with the onion and garlic, then knead with rest of the ingredients to taste. (add oil if desired)
Form into patties and bake at around 350 until brown and chewy, about 30 minutes.
Fiddle around with the flours to achieve the consistency you want. The more flour (especially vital wheat gluten), the more chewy.
