Make-Ahead Fresh Green Beans

Ingredients

  • 1 tablespoon Extra-virgin olive oil
  • 1 medium red bell pepper, in 1/4 strips
  • 2 Cloves garlic, minced
  • 1 1/2 pounds fresh green beans, blanched
  • 1/4 cup balsamic vinegar
  • Salt and freshly ground pepper to taste
  • 1/4 cup freshly grated imported Parmesan cheese

Preparation

1 Sauté bell pepper in oil until tender.

2 Add garlic, green beans, vinegar, salt and pepper

3 Heat until beans are warmed

4 Serve hot, topped with freshly grated cheese.
