Mac N’ Cheese All Grow’d Up
Smoked Gouda and Fresh Spinach make this dish a welcome change from traditional Baked Macaroni and Cheese.

Ingredients
- 1/2 cup whole-wheat coarse bread crumbs
- 1 tablespoon butter
- 1/4 cup thinly sliced green onions
- 2 garlic cloves, minced
- 2 cups 2% or whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 oz. shredded smoked gouda cheese
- 3 oz. grated fresh Parmesan cheese
- 5 cups coarsely chopped fresh spinanch
- 4 cups hot cooked Rigatoni (about 2 cups uncooked)

Directions
Preparation
1 1. Preheat over to 350
2 2. Melt butter in a large saucepan over medium heat.
3 3. Add sliced onions and minced garlic and cook 1 minute.
4 4. Add flour, cook 1 minute stirring constantly.
5 5. Gradually add milk, salt and pepper, stirring constantly with whisk until blended.
6 6. Bring to a boil and cook until thick.
7 7. Remove from heat, and add cheeses, stirring until melted.
8 8. Mix Rigatoni into cheese sauce, stirring until well blended.
9 9. Quickly mix in spinach. Spoon mixture into a 2 qt. baking dish coated with cooking spray. Sprinkle bread crumbs.
10 10. Bake at 350 for 15 min. or until bubbly (If bread crumbs aren”t browning, I brush them with melted butter and popit until the broil until brown. Will not take more than a few seconds.)
