Long Grain and Wild Rice Salad

One variation on this salad uses chopped scallions instead of red onion. Or you could add 3 tablespoons of slivered almonds for a satisfying crunch. This rice salad also tastes great made with Near East Whole Grain Blend Pecan and Garlic flavor.

Servings

Ingredients

  • 1 (6-ounce) box Near East Long Grain and Wild Rice, cooked according to package directions
  • 1/3 cup Craisins or dried cranberries
  • 2 tablespoons fresh minced parsley
  • 1/2 medium red onion, minced
  • 1 large celery stalk, diced
  • 3 tablespoons olive oil
  • 2 tablespoons white vinegar

Directions

Preparation

  1. While rice is cooking, mix Craisins, parsley, onion, celery, olive oil and vinegar in a large bowl and set aside.
  2. Once rice cools, add to the bowl and mix well.
  3. Cover and chill in refrigerator at least 4 hours, or up to 1 day.

  2. Hi Jamie: The only variation that I made to this recipe is that I added some SMALL orange peel pieces to your recipe. My family now asks me to make this recipe ALL of the time — I was really afraid that they would not like this recipe, however, my fears were really unfounded. Thank you for a wonderful recipe.     Can you use any type of wild rice? Trader Joe sells a bag of wild rice medley? How much should I make? About a cuo

    • Hey Mir – sure you can, and you are correct you’ll need 1 cup of dry rice. The Near East Long Grain and Wild Rice come with a spice packet and that’s why the dressing here is just oil and vinegar bc the rice spice packet has loads of flavor. If you will be using rice without a spice packet then you will need to add salt and pepper to taste at the very least. Or you can use 5 tablespoons of Italian dressing in place of the oil and vinegar.
