Lemon Bars

Ingredients

  • 1-1/2 cups flour
  • 1/2 cup powdered sugar
  • 3/4 cup (1-1/2 sticks) butter or margarine, cut into pieces, room temperature
  • 4 eggs
  • 1-1/2 cups sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon plus 1 teaspoon flour
  • 1 tablespoon plus 1 teaspoon grated lemon zest
  • powdered sugar

Preparation

  1. Preheat oven to 350.
  2. In a bowl combine 1-1/2 cups flour, 1 teaspoon lemon zest and 1/2 cup powdered sugar.
  3. Add the butter or margarine and cut into the flour mixture until mixture resembles coarse meal.
  4. Press mixture into bottom of 9x13x2-inch baking dish.
  5. Bake until golden brown, about 20 minutes.
  6. Remove the pan from the oven.
  7. Keep the oven on.
  8. In a bowl combine the eggs, 1-1/2 cups sugar, lemon juice, 1 tablespoon plus 1 teaspoon flour and 1 tablespoon lemon zest and whisk it together.
  9. Pour the liquid onto the crust.
  10. Bake until mixture is set, about 20 minutes. Cool. Cut into 24 bars.
  11. Sift powdered sugar over the top just before serving.
