Lebanese Chicken Kabobs

    Bamboo skewers

      Chicken Marinade

      • juice of 2 limes
      • 8 cloves of garlic, minced
      • a few leaves fresh thyme
      • 1 Tbsp paprika
      • 1 1/2 tsp cumin
      • 3/4 tsp cayenne
      • 3/4 tsp cinnamon
      • 1 tsp sriracha hot sauce
      • 6 boneless skinless chicken breasts


      • 2 peppers
      • 2 zucchini, sliced about 1/2 inch thick
      • 1 package mushrooms
      • 1 onion, cut so that the layers stay together
      • olive oil
      • sea salt + pepper
      • fine herbs


      Step 1: Soak bamboo skewers in water

      Step 2: Cut chicken into 1 inch squares

      Step 3: Mix marinade ingredients together and pour on chicken. Marinate for at least an hour – best is overnight.

      Step 4: Chop up the veggies. Coat with olive oil, sea salt, pepper and fine herbs.

      Step 5: Put veggies and chicken onto skewers – not too close together to make sure they cook well

      Step 6: Grill on BBQ, turning regularly.
