Layered Mushroom Kugel

I came up with this recipe to satisfy my love of mushrooms and as a dish that fills my gluten-free needs. I've made this pareve but to make it more decadent use dairy ingredients.

  • Cook Time : 20 mins min
  • Ready Time : 45 min

Ingredients

  • 10 - 12 oz. mushrooms, chopped, crimini, shitake and portabello about 4 cups chopped
  • 1 cup onion, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon margarine
  • 2 cloves garlic chopped
  • 2 tablespoons white wine
  • 1/2 teaspoon salt
  • 2 cups yellow cornmeal
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup soy milk
  • 1 cup sour cream substitute
  • 2 eggs, beaten
  • 3 tablespoons margarine, melted

Directions

Preheat oven to 450 degrees. Grease 9 in round baking dish. Heat the oil and margarine in a large skillet. Saute the mushrooms, onions and garlic over medium heat about 20 minutes, until soft. Mix in the salt.
Add the wine and stir until absorbed.
While the mushrooms are cooking prepare the cornbread mixture.
In a bowl, mix together the cornmeal, salt and baking powder. Add the soy milk, sour cream substitute, eggs and margarine. Take 1/3 of the sauteed mushrooms and add to the cornbread mixture. Mix gently. It’s o.k. if there are lumps!
Spread half the cornbread mixture into prepared baking dish. Spread the mushroom mixture and then top with remaining cornbread mixture.
Bake about 20 minutes.

    Can you substitute corn meal with flour?

  15. We made this kugel for a family simcha…it was a hit! The local supermarket only had portabello and button mushrooms at the time so that’s what we used. We love the unique flavor of the cornmeal with the mushrooms …we think it will be an excellent SUKKOT dish to have this year!

    Well, I voted for this, because I love mushrooms. But if I make it again, I will double the mushrooms, onions and wine. I already added pepper to the cornbread, but I think it still needs something more. Maybe some herbs.
    I think 3 layers, with 2 layers of mushrooms will distribute the taste better, as well.

    BTW I put dried parsley in a sieve, and sifted it over the top, which really improved the appearance.

    Love this mushroom and cornbread combo. I’m sure the sour cream makes it super moist. THIS SHOULD WIN! Hands down over the other one!!! And Gluten free to boot.

    As a gluten-free sufferer myself I was amazed by the taste of this dish, and the simplicity of cooking. 45 minutes it’s all it takes for a dish full of taste and a combination of ingredients that not only go well together, but are also very healthy.

    I’d try with only one clove of garlic, but mild mushrooms need some flavour so maybe 2 isnt such a bad idea?

    This is an excellent recipe. There is little sugar and is incredibly low in fat. I have baked a dish that was very similar and was extremely tasty.

    I am a big fan of mushrooms, and this recipe is perfect for mushroom lovers! It tastes amazing and goes great with certain soups, and many southern/country meals that we are used to in my area.

    Also, I absolutely love how easy it is to make! I don’t think I will ever make regular corn bread again! This is so better and more flavorful!

    This recipe was appealing to me, but I was extremely disappointed with the way it turned out. The cornbread was very dense and dry, and completely out of proportion to the mushrooms. I agree Leah L. who commented that the amount of the mushroom mixture needs to be doubled, though I am not sure that would be enough. I think that the amount of the cornmeal mixture should also be cut down. However, I don’t think that I liked this recipe enough to bother trying it again.
