Latkes with a truffle twist
2 potatoes, half a yellow onion - put it in the cuisinart until it's pretty much mush. Add somoe flour - maybe 1/2 cup. Add some kosher salt - maybe 1/2 tsp. Add an egg. Stir it up then fry till golden brown. Sprinkle with truffle salt before serving and/or serve with sharp cheddar cheese and salsa.
