  • 2 fresh tomatoes or 1 pint grape tomatoes
  • 2 large cucumbers or 4 persian cucumbers
  • 1/2 small red onion
  • 1-2 Tbsp. olive oil
  • 1 tbsp. lemon juice
  • 2 tbsp. chopped parsley
  • coarse salt and pepper to taste
