Individual Meat Loaves

  • Gefen Canola Oil Cooking Spray
  • 1 tablespoon canola oil
  • 1 medium onion, finely chopped
  • ½ green pepper, seeds and ribs removed, finely chopped
  • 1 pound ground beef
  • 1 large egg, beaten
  • ½ cup plain bread crumbs
  • ¼ cup matzoh meal
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon Freshly ground black pepper
  • 1 teaspoon dried thyme leaves
  • 1 tablespoon Worcestershire sauce
  • 1 Clove garlic, minced


  1. Preheat oven to 425° F. Lightly spray 4 (6-ounce) ramekins with cooking spray.
  2. In a small sauté pan, heat oil over medium heat and cook onions and peppers for 6 to 7 minutes.
  3. While vegetables are cooking, combine ground beef, egg, bread crumbs, matzoh meal, salt, pepper, thyme,and Worcestershire sauce in a large bowl.
  4. Add garlic to vegetables and cook for about 1 minute.
  5. Add vegetables to the ground beef mixture and mix until combined.
  6. Form into 4 balls and place in prepared ramekins. Place ramekins on a cookie sheet. Bake for 25 minutes.
  7. Serve in the ramekins with Wasabi Mashed Potatoes on the side.

    WOW! Since we are empty nesters, I am always looking for recipes for two. this would be perfect! I can freeze the leftovers for when dh travels.

  2. Very easy to make. I always have to send dinner with one child to school. I bought mini loaf pans and the meat loaves are in the freezer! I added garam Marsala and a brown sugar/ketchup glaze to them. I sampled and it’s really good!

    Never thought of making meat loaf in individual pans great idea. I don’t have meat ramekins so I used foils instead. I left out the green peppers(don’t like) other than that it was easy to make. Tasted really good and froze two.

    Came out good. Not much different from other meatloaf recipes. I put them in small throw away tins.
