How To Make A Simply Gorgeous Cake

I was given a fun challenge and asked to decorate a cake using Mike and Ike candies. I wanted to come up with something simple and fun to do, but something elegant that would really make a statement. I came up with this really dramatic pattern that looks really cool and complicated. It is actually a lot easier to do than it seems. You need to have a cake ready to decorate. I used a cake covered in white fondant but you can also use a cake covered in a smooth layer of buttercream. Then you are ready to decorate.

  • Prep Time : 20 min
  • Ready Time : 20 min

  • 1 cake covered in a thin layer of buttercream or fondant
  • Tons of Mike and Ike candies

Choose your favorite Mike and Ike flavors.  I chose lemonade flavor because they are sweet and tangy and the colors were really pretty together.

I began by laying out a rainbow pattern.  Then I used a sharp blade, you can also use a knife, and cut each candy in half.  This process took a bit of time, but it was worth it!

Then, using royal icing,  I attached each half of the candy in a row around the bottom of the cake.  If the cake was finished in buttercream, the candies can probably just be stuck into the cream.  I followed my predetermined pattern all around the cake: purple, pink, orange, yellow, green.  Once I finished the entire bottom row I continued to the second row.

Instead of placing the purple candy right above the bottom one, I placed it in between the purple and pink.  Then the pink was placed beside that, in the crack between the pink and orange candies.  Continue around the cake forming the second layer slightly offset from the bottom row.  Keep building up row by row until you reach the top.  I finished the top edge with a whole candy instead of cutting them in half to give it a more polished look.

This is a great fun project to do with kids!  I would cut the candies up first, but let the kids decide on the pattern and allow them to arrange them all around the cake!  Mike and Ike candies are so pretty that they make the cake look like a gem.  This cake design will surely pop at your next party, and nobody will believe that it’s all made out of delicious Mike and Ike candies!

Wouldn’t this cake be difficult to cut? The whole cake looks pretty but each slice would be a mess

  2. The candies would probably fall off a bit when cut, but at that point it’s just delicious! Enjoy the beauty, then dig in and enjoy the cake and snack on the fallen candies!
