Ingredients
- ½ cup honey
- 4 tablespoons olive oil
- ¼ cup warm water
- 1 tablespoon ground cinnamon
- 1 teaspoon ground cumin
- Salt & black pepper
- 1½ pound peeled pumpkin, cut into ½ inch cubes
Directions
- Preheat the oven to high heat (375 degrees F).
- In a large bowl mix the honey, olive oil, hot water, cinnamon, cumin, salt and pepper, add the diced pumpkin and stir well. Arrange in a single layer on a pan and bake for about 45 minutes, or until pumpkin softens completely.
