Honey Pumpkin


  • Prep Time : 15 min
  • Cook Time : 45 min
  • Ready Time : 1 hour




  • ½ cup honey
  • 4 tablespoons olive oil
  • ¼ cup warm water
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cumin
  • Salt & black pepper
  • 1½ pound peeled pumpkin, cut into ½ inch cubes


  1. Preheat the oven to high heat (375 degrees F).
  2. In a large bowl mix the honey, olive oil, hot water, cinnamon, cumin, salt and pepper, add the diced pumpkin and stir well. Arrange in a single layer on a pan and bake for about 45 minutes, or until pumpkin softens completely.
Serve hot (perfect as a side dish for the Duck Breast).
