- 3/4 cup honey
- 1/2 cup margarine
- 1/2 cup dark brown sugar
- 1/2 cup strong coffee
- 2 Eggs
- 3 cups Flour
- 2 teaspoons Baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 2 cups finely chopped apples
- Honey-Lemon Glaze (1/2 cup honey, 2 tsp. grated lemon peel, 1/2 tsp. ground cinnamon)
Directions
Preparation
1 Combine honey, margarine, sugar, coffee and eggs; beat thoroughly.
2 Combine flour, baking soda, cinnamon, nutmeg, salt and ginger. Add to honey mixture; beat until thoroughly blended.
3 Stir in apples. Pour into greased 8-inch fluted* baking pan. Bake at 325°F for 50 to 60 minutes, or until pick inserted near center comes out clean. Cool in pan 10 minutes. Invert on serving plate.
4 In small saucepan combine honey, grated lemon peel and ground cinnamon to make Honey Lemon Glaze; heat until consistency is thin enough to brush over warm cake.
