Learn to make your own homemade ramen noodles, healthier than the store bought variety and so much fresher and tastier.

- 1 ½ cup flour (+ extra flour for the preparation process)
- 1 teaspoon salt
- 2 eggs
- 2-3 teaspoons water
- Zest from one lemon
1. Mixing the ingredients:
On a clean surface combine the flour, salt and lemon zest and shape as a mound. Using your finger create a “well” in the center.
Add the eggs and water to the “well” and using a fork slowly mix the flour and egg (this classic Italian trick helps you mix the egg into the flour with less mess). Once the wet and dry start to come together add a bit of flour and keep kneading the dough until it is no longer sticky and can be rolled into a ball (the dough will be a bit stiffer than bread dough).
2. Letting the dough rest:
Cover the dough with a damp towel and let rest for at least 30-40 minutes (this way the gluten will have time to strengthen and will make rolling the dough easier).
3. Creating the noodles:
In a large pot bring salted water to a boil. On a clean surface flatten the ball and using a rolling bin roll the dough until you get to about 1/8 of an inch thickness. Use more flour as needed to prevent from sticking to the rolling pin or surface.
Transfer the dough to a floured cutting board and fold in half, sprinkle flour and fold once again (the folds will resemble the folded store bought pastry dough), sprinkle some more flour.
Using a sharp knife cut the folded dough into thin noodles and place on a floured tray while sprinkling some extra flour to prevent the cut noodles from sticking to each other.
4. Cooking the noodles:
Slowly add the noodles to the the boiling salted water and mix slowly (don’t dump them, we don’t want them to stick to each other). Cook for about 3-4 minutes (we want them to have a nice bite) and transfer directly to the serving bowl, adding the broth and toppings (see soup recipe here).
