Spread cream cheese evenly over 6 slices of bread. Top with half of the onion slices and all the cucumbers. Stack with lettuce leaves, sliced tomato and a second slice of bread. If you soak the onions slices in cold water–then dry thoroughly–they will be less sharp/sweeter.

I serve this a lot for Shabbat lunch but I also put out Pesto Wraps and alfalfa sprouts in addition to the ingredients listed. It’s such an easy lunch to prepare on Friday to serve on Saturday. I use a multi-divided tray and prep all veggies on Friday.
