Healthier Potato Kugel

A traditional dish that is quick and easy to make. The parsnip, zucchini and onions add flavor and make it healthier as well. Baking the kugel in muffin trays is a fun and interesting way to serve the kugel.

  • Prep Time : 15 min
  • Cook Time : 1 hour
  • Ready Time : 1 hour, 15 min

  • 2 Spanish onions
  • 6 potatoes
  • 1 parsnip
  • 1 zucchini
  • 6 eggs
  • 1 ½ tablespoons salt
  • ½ teaspoon black pepper
  • 1/3 cup oil

Preheat oven to 350 degrees.

Pour 1/3 cup oil in 9×13 baking pan.

Place baking pan in the oven with oil. It is important for the oil to become hot.

Meanwhile, grate onions, potatoes, parsnip and zucchini with a box grater or food processor

Add eggs, salt and pepper. Mix until incorporated.

Take out pan with oil from oven and place potato mixture in pan.

Bake for an hour or until kugel is brown and crunchy on top.

is that 1/3 cup of oil?

Is it safe to assume the recipe should say 1/3rd cup of oil instead of 13 cups?

  3. 13 cups of oil? Is that a mistake?

Also, it says to add onions but they are not included in the instructions. I cooked it for 15 minutes without them in it (but then realized and added them in for the rest of cooking)! whoops! Please advise.

  5. What kind of potatoes work best?

Do you have nutrition information for this recipe? I am cooking for a diabetic and am curious if you might know how many carbs per serving?
