Hazelnut Honey Cake

  • 3/4 cup honey
  • 1/2 cup margarine
  • 1/2 cup dry red wine
  • 2 Eggs
  • 3 cups Flour
  • 2 teaspoons Baking soda
  • 1 teaspoon Grated lemon peel
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
  • 1 cup finely chopped hazelnuts



1 In a large bowl combine honey, margarine, wine and eggs; beat thoroughly. In another bowl, combine flour, baking soda, lemon peel, spices and salt; mix well.
2 Add dry ingredients to honey mixture; beat until thoroughly mixed. Stir in hazelnuts.
3 Pour into greased and floured 13x9x2-in. pan. Bake at 325°F for 35 to 40 minutes or until wooden pick inserted in the center comes out clean.
4 Cool 15 minutes on rack, then cut out squares of cake and place on platter. Dust with powdered sugar.
