Hasselback Potatoes with Balsamic Mayonnaise Dipping Sauce
These potatoes turn out crisp on the outside, and perfectly tender on the inside. Break off the crisps and dip them into balsamic mayonnaise dipping sauce for a really delicious experience.

Ingredients
- 4 potatoes, washed, scrubbed and dried
- 1 tablespoon extra light olive oil
- 1 clove garlic, crushed (optional)
- Salt and pepper to taste
- Balsamic Mayonnaise Dipping SAuce
Directions
Preheat oven to 450°F.
Make cuts on top of each potato, 1/8 inch apart, being careful not to go all the way through. Place wooden spoons along each side of the potato, which will help prevent cutting all the way through.
Place potatoes on a shallow baking sheet.
In a small bowl, combine the olive oil and crushed garlic. Using a pastry brush, brush the tops of the potatoes very well, making sure some of the oil gets between the cuts.
Sprinkle very generously with salt and pepper.
Bake uncovered for 1 hour and 30 minutes. The potatoes will fan out while baking.
Serve with balsamic mayonnaise dipping sauce.

Tried these potatoes and they were great! We didnt use the dipping sauce, and instead had the potatoes as a side to a meal. It was a great variation on the traditional baked potato. Definitely try the ‘wooden spoon’ trick, it worked to keep me from slicing all the way through the potato and keeping the slices even in terms of depth
