Grilled “Buttermilk” Chicken with Herbs

For this recipe I made pareve buttermilk by mixing soy milk with vinegar, it worked great.

Ingredients

  • 11/2 cups soymilk mixed mixed with 1 tbsp vinegar
  • 8 cloves garlic, chopped
  • 1 Tbsp paprika
  • 1 tsp. each sage, oregano, rosemary, minced
  • kosher salt and black pepper to taste
  • 6 pounds bone-in chicken pieces

1 In a small bowl or measuring cup, combine the soymilk mixure, garlic, paprika, herbs, 11/2 tsp. salt, and 3/4 tsp. pepper.
2 Divide the miture and chicken between 2 large sealable bags. Let marinate in refrigerator, tunring occasionaly, for at least 1 hour and up to overnight.
3 Heat gril to medium-low. Remove the chicken from the marinade and grill, covered, turning occasionally, until cooked through, 30 to 40 minutes.
