Greens with Parmesan Vinaigrette

This would make a great dressing for an entree-sized salad.

Ingredients

  • 1/3 cup freshly grated parmesan cheese
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons white-wine vinegar
  • 1/2 teaspoon finely chopped garlic
  • 1/2 teaspoon Dijon mustard
  • Salt & freshly ground pepper to taste
  • 8 cups mixed salad greens

Directions

  1. Whisk together Parmesan, oil, vinegar, garlic and mustard. Season with salt and freshly ground pepper. Toss with salad greens.

Per Serving: 154 calories; 13 g fat (3 g saturated fat, 8 g mono unsaturated fat); 7 mg cholesterol; 3 g carbohydrates; 6 g protein; 2 g fiber; 275 mg sodium; 350 mg potassium
