Golden Pumkin Bread
This is a yeast pumpkin bread that I have adopted from the Farm Journal's Homemade Bread Cookbook. Have made this for years for Thanksgiving time. Everyone raves about how delicious it is. I have changed the original recipe to make it parve. I am very particular and only use King Arthur flour for my baking. I use a bread machine to mix my bread doughs and bake all breads in my oven. I initially made this bread with a standard mixer having a dough hook. This bread is worth all of the work.

- Prep Time : 15-30 minutes for dough- then 2-2 1/2 hours to rise min
- Cook Time : 35 minutes min
- Ready Time : 50 min
Servings
Ingredients
- 1 1/2 cups water
- 1 cup canned pumpkin
- 1/4 cup vegetable oil I use safflower or canola
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon cardamon
- 2 teaspoons instant yeast
- 6 1/2-7 cups flour
- 2 large eggs
- 1/4 cup sugar
Directions
Dissolve yeast in luke warm water and sugar. Combine all the of the dough ingredients and mix and knead until you have a smooth dough. Knead for 8-10 minutes. Place in lightly greased bowl and turn dough over to grease top. Cover the bowl with plastic wrap and let rise in a warm place until doubled, about 1-1 1/2 hours. Punch down. Turn onto a board, divide in half and round up into 2 balls. Shape into two loaves and place in 2 greased 9x5x3 loaf pans. Brush the top with a little oil (optional). Cover and let rise until almost doubled, about 50 minutes.
Bake in moderate oven 375 F for about 35 minutes, or until bread tests done. makes 2 loaves.
