Ingredients

  • 2 c. rice flour (brown or white)
  • 3/4 c. tapioca flour
  • 1 t. baking soda
  • 1/2 t. baking soda
  • 1 c. coconut oil (margarine or butter)
  • 1 1/2 c. sugar (I use organic evaporated cane juice)
  • 1 Egg, beaten
  • 1 t. vanilla
  • 1/4 c. sugar in the raw, if desired
  • (add walnuts or chocolate chips if desired)

Preparation

1 Cream coconut oil, sugar then add egg and vanilla. Sift together dry ingredients and slowly add to wet ingredients until just combined. (Add chocolate chips or chopped walnuts if desired.) Roll into 1" diameter balls . Place cookie on a
2 parchment lined cookie sheet. Bake at 375 degrees F for 8-10 minutes.
3 (If desired, you can roll the balls into the sugar in the raw before baking, for extra crunch and sparkle.
4 Let cool a few minutes before removing from cookie sheet.
