German Sausage Saute
I made this with vegetarian sausage and it was great, so you can go meat or vegetarian and it will be great.

Ingredients
- 1 tablespoon olive oil
- 1 onion, sliced
- 1 red pepper, sliced
- 1 package sausage sliced diagonally
- 1/4 cup tomato paste
Directions
Preparation
1 Place oil in a large nonstick skillet and add the sliced onions. Saute over low heat, stirring often, until onions are golden brown, soft and carmelized. Add pepper and cook a few minutes more.
2 Add the sliced sausage and continue to cook and brown. Season with salt and pepper and add tomato paste. Cook until mixed through. If it gets too dry add a little liquid, water or beer.
