Garlic Meatballs with Lemon Sauce

Ingredients
- 1.5 pounds extra-lean ground beef
- 3 slices of bread torn into soft crumbles
- 4 garlic cloves peeled and minced
- 2 tablespoons fresh parsley leaves chopped
- 2 tablespoons fresh mint leaves chopped
- 1 teaspoon paprika
- 1 teaspoon salt
- ground black pepper to taste
- 2 large eggs
- 8 ounce tomato sauce
- 2 lemons need the grated lemon rind
- .25 cup lemon juice
- salt to taste
- ground black pepper to taste
- 1 tablespoon fresh mint leaves minced
Directions
Combine the ground beef, bread crumbs, garlic cloves, parsley, mint, paprika, salt, pepper, and 2 eggs together in a bowl. Form walnut-sized balls. Place balls inside of slow cooker.
Combine the tomato sauce, lemon rind, lemon juice, salt, pepper, and mint leaves. Pour sauce over meatballs. Cover and cook on low for 4-6 hours. Serve with rice.
