Garlic Confit

Use this confit in any recipe that needs a strong flavorful garlic.


  • Prep Time : 5 min
  • Cook Time : 40 min
  • Ready Time : 45 min


1/2 cup


  • 50 garlic cloves
  • Extra-light olive oil


Cut off and discard the root ends of the garlic cloves.  Place the cloves in a small heavy gauged saucepan over medium heat and add enough oil to cover them completely. The garlic should cook slowly with lazy bubbles rising to the surface.  Cook the garlic until soft and lightly brown for about 30-40 minutes.  Remove the saucepan from the heat and let cool.

Chef’s Tip: Save the oil!! This is a pure garlic oil that you can use in the future as a marinade or it can be used in salad dressings.
