Ingredients
- 3 medium firm green tomatoes
- salt
- 1 cup all-purpose flour
- 1/2 teaspoon white pepper
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- pinch cayenne
- 1/2 cup buttermilk or soymilk mixed with a tablespoon vinegar
- 1 egg
- 1/3 cup cornmeal
- 1/2 cup breadcrumbs
- oil as needed for frying
Directions
Cut unpeeled tomatoes into 1/2 inch thick slices. Sprinkle with salt and allow to stand for 5 minutes. Using three separate bowls prepare the coating. In one bowl combine the flour and the seasonings. In the second bowl combine the milk and egg. In the third bowl combine the breadcrumbs and cornmeal.
Heat the oil in a large skillet on medium heat. Beat the egg and buttermilk together. Dip tomato slices into the four, then egg mixture then breadcrumbs. Then place in hot oil and fry on each side for 3-5 minutes. Set on paper towels to drain.
For a pareve version just serve as is, if you are eating a dairy meal serve with a sprinkling of goat cheese.
