Fresh Pea and Spinach Sauce over Spaetzl
I recently had some fresh peas from my CSA and my 8 year old son decided he was going to make dinner. Of course he did need a lot of help, but this sauce was all his and it was absolutely delicious on the spaetzl. I can only imagine it on many other foods and it really retained the fresh pea flavor.

Ingredients
- 1 cup fresh peeled English peas
- 1/2 cup fresh leave spinach
- about 1 tablespoon white wine
- about 1 tablespoon mascarpone
- salt and pepper to taste
Directions
Mix peas and spinach leaves in a food processor with a little white wine to get it moving. Once it is mostly pureed remove to a bowl and mix in a tablespoon of Mascarpone. Stir well and mix with fresh hot spaetzl. Top with parmesan and/or fresh ground pepper if desired.

Spaetzl is a type of German egg noodle. It is much easier to make than any other pasta especially if you have a potato ricer.

This sounds delicious. It might be a good idea to explain (for the people who don’t know) what spaetzl is. I learned to make it at the center for kosher culinary arts where my husband and I enjoyed a couples night out.

I made a variation of this last night, substituting frozen peas for fresh and wide egg noodles from the freezer section for the spaetzl. These two substitutions made the meal fast, easy, and mess-free. The results were delicious!
