Fresh Fava Beans with Pecorino Cheese

Ingredients
- 3 pounds fresh, young fava beans (about 2 cups)
- 1 cup diced pecorino cheese
- 1/2 cup extra virgin olive oil
- Salt to taste
- Freshly ground black pepper, to taste
Directions
1 Shell fava beans and discard the pods. Parboil the fava beans in boiling water, about 5 minutes. Cool and pop them out of their skins.
2 Just before serving, spoon the fava beans and pecorino into a bowl. Drizzle with the extra virgin olive oil and add salt and pepper, to taste.
3 Spoon into serving bowls or cups.

Where do you get kosher pecorino cheese?
Also, can you really de-pod and de-skin three pounds of favas in 10 minutes, including boiling and cooling time? I think you should re-time this one.
I buy my Pecorino from the Cheese Guy - they sell it at Fairway in NY and he is usually at the Sunday Farmer’s market in Riverdale.
