French Onion Potato Latkes
These are delicious without the cheese too, but if you like Gruyere and French onion soup you will love these.

- 3 large yellow onions, sliced thin
- 1 tablespoon oil
- 2 .5 lb potatoes, cleaned
- 3/4 cups matzo meal
- 3 Eggs
- 1/2 cup shredded gruyere

Preparation
1 Fry the onions in the oil on low heat until caramelized at least 30 minutes, stirring occasionally.
2 Grate the potatoes in the food processor and place in a large towel. Squeeze out all the water from the potatoes into a small bowl, allow to settle for 10 minutes.
3 In a large bowl, combine the grated potatoes with the caramelized onions, eggs, cheese, matzoh meal and salt and pepper. Mix until all combined.
4 Heat frying pan with a layer of oil. Once hot drop large tablespoonfuls of potato mixture and flatten with spatula. After a few minutes flip to cook both sides until golden. If they are not sticking together well, add more eggs to the rest of the batter.
5 You can cook them ahead and bake in a 350 degree F oven until heated through around 10 minutes.

Wonderful! The gruyere doesn’t come through very strongly so if you wanted to leave it out for a meat meal you could still make these.
