Fennel craisin salad

Ingredients
- 1 bulb fennel, cleaned and chopped
- 2 small cucumbers (Israeli-small), chopped
- ¼ cup craisins
- 2 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- a pinch of salt and pepper
Directions
1. Place fennel, cucumbers and craisins in a small salad bowl and toss.
2. Mix olive oil and lemon juice in a cup and pour over veggies. Add the pinch of salt and pepper and toss to combine.
