Endive Citrus Salad with a Mojito Dressing
The bitterness of the endive, the sweetness of the citruses, and the tang of the lime and mint, bursts onto the palate, giving the dish a refreshing delicious flavor. Mojito, a well known cocktail which utilizes rum, mint and lime, is the inspiration for the dressing in this striking salad.

Servings
Ingredients
- 4 heads of Belgian endive, leaves sliced off the stem, washed and dried
- 2 large oranges, segmented
- 1 large pink grapefruit, segmented
- Zest of a lime
- ¼ cup chopped mint
Dressing:
- Juice of two limes
- ¼ cup olive oil
- 1 tablespoon rum
- 2 teaspoons honey
- 1 teaspoon warm water
- 1 teaspoon black pepper
Directions
Mix dressing ingredients.
TIP: Use this salad as a hors d’oeuvres or appetizer at an event or family gathering.
