Enchilada Crockpot Chicken

Ingredients
- 1 whole Whole chicken, cut into pieces can use as much chicken as can fit into the pot
- 1 onion, diced
- 1 green pepper, chopped
- 1 can stewed tomatoes (14.5 oz) Is have used Italian Style and Mexican but others should work too.
- 1 can chilli beans in chilli sauce (15.5 oz)
- 1/2 cup enchilada sauce Have used Ortega (bottle) or Target brand (can) with kosher certification
Directions
Place ingredients in crockpot and leave on low for about 20 hours (we use this on Shabbos). For weekdays putting it on all day should work too (but the Shabbos version is the best). The result will have a lot of liquid so don’t be concerned about burning. No need to add any water.
