another great eggplant salad, tastes best freshly made but if you want to make ahead you can stop after cooking the eggplant and removing the innerds and simply refridgerate the cooked eggplant and mix all together before serving.

Ingredients

  • 3 med eggplants
  • 2 large tomatoes
  • 1 large onion
  • Salt

Preparation

Preparation

1 heat a pot on high, place the eggplants whole inside and let cook on each side until blackened (5min each side) you want it oozing before its done. likewise you can grill on a bbq to get the same effect.
2 remove the innereds of teh eggplant by cutting in half and scraping the insides out, chop the innereds well
3 place in mixing bowl with chopped tomatoe and chopped oinion, salt to taste. enjoy!
