Eggplant Appetizer


  • Prep Time : 10 minutes min
  • Cook Time : 10 minutes min
  • Ready Time : 20 min




  • 1 eggplant, diced small
  • 1 onion, finely sliced
  • 1 Clove garlic, minced
  • 1/4 cup olive oil
  • 1 tbsp. balsamic vinegar
  • Salt and pepper to taste



1 Sprinkle eggplant with coarse salt and let sit for about an hour. Rinse and drain eggplant.
2 Heat oil in large pan, add onion and garlic, saute until fragrant.
3 Add eggplant to the pan and saute until browned. Add balsamic vinegar and toss.

    As a nutritionist on this site it would be wonderful if you could give calorie counts for the recipes!!

    • I know I am sorry, but it is actually very time consuming to do it right and I just don’t have the time, but we are working on having it done automatically, in the meantime I suggest this tool to you that works pretty well and is quick and easy – http://caloriecount.about.com/cc/recipe_analysis.php just copy and paste the ingredients in there and you should get your info.
