Ingredients
- 1 eggplant, diced small
- 1 onion, finely sliced
- 1 Clove garlic, minced
- 1/4 cup olive oil
- 1 tbsp. balsamic vinegar
- Salt and pepper to taste
Directions
Preparation
1 Sprinkle eggplant with coarse salt and let sit for about an hour. Rinse and drain eggplant.
2 Heat oil in large pan, add onion and garlic, saute until fragrant.
3 Add eggplant to the pan and saute until browned. Add balsamic vinegar and toss.

As a nutritionist on this site it would be wonderful if you could give calorie counts for the recipes!!
