Ingredients

  • 1 pkg.:yellow or butter cake mix
  • 2 :eggs
  • 1- 1/2 cup:eggnog
  • 1/4 cup:melted butter
  • 1/2 teaspoon:nutmeg
  • 1/2 teaspoon:rum extract

  • 1 sm. pkg.:vanilla pudding (not instant)
  • 2 cup:eggnog
  • 1/2 teaspoon:rum extract

  • :Frosting
  • 1-1/2 to 2 cartons :ready made cream cheese frosting
  • 1/2 cup:chopped pecans
  • :Nutmeg

Preparation

  1. Preheat oven to 350.
  2. Grease and flour 2, 9 inch round cake pans and then line them with wax paper.
  3. Combine all the ingredients in a large mixing bowl. Beat 4 minutes. Pour the batter into pans.
  4. Bake at 375 degrees for 30 minutes. Cool 10 minutes. Turn out onto a cake rack and cool thoroughly.
  5. While the cake is cooling combine the pudding mix and eggnog in a saucepan and cook, according to the directions until thickened.
  6. Add the rum extract, mix to combine and cool.
  7. To assemble, spread cooled eggnog filling between the layers.
  8. Frost with cream cheese frosting and sprinkle the pecans on top.
  9. Dust the top with nutmeg.
  10. Refrigerate.
