Easy Slow Cooker Short Ribs

Short ribs are amazing when cooked in a slow cooker, as they become extremely tender... the combination of flavors here is fantastic!

6 Servings


  • 3 pounds beef short ribs
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 2 tablespoons brown sugar, packed
  • 1/4 cup all-purpose flour
  • 10.5 ounce can of condensed french-onion soup
  • 12 ounce bottle of beer or dark ale
  • 1-2 onions, diced
  • mashed potatoes or cooked noodles (for serving)


In a 5-quart slow cooker, make a bed on the bottom with the diced onions. Place the beef short ribs on top. Add the brown sugar, garlic, thyme, and flour, and using tongs, toss to coat with the meat (try to leave the onion bed on the bottom).

Pour the soup and beer over all.

Cover and cook on low for 8 to 9 hours, or until the beef is fork-tender.

Serving tip: Serve the beef with the onion gravy on top, with mashed potatoes or noodles on the side (with additional gravy).

    In the recipe for Easy Slow Cooker Short Ribs, it calls for a can of condensed French-onion soup. What brand do you find that is kosher? I live in San Diego, CA and don’t think there is such a thing. Thanks. I did substitute vegetable bouillon, but I’m sure the taste isn’t the same.
