Easy Pumpkin Pound Cake

This is a flavorful pound cake that can be served up in a hurry or breakfast, or add a spoonful of whipped cream that has cinnamon and powdered sugar added to pep it up, for an impressive dessert.

Ingredients

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 cup cold butter, cut in 8 slices
  • 2 eggs
  • 1 3/4 cup pumpkin
  • 1 teaspoon vanilla

Preparation

In the food processor, whirl the dry ingredients till blended. Add the butter and pulse until it's fine like cornmeal. Add the eggs, pumpkin and vanilla and process till smooth and combined. DON'T over-mix! Pour into greased and floured loaf pan. Bake at 350 degrees for 55-65 mins., depending on your oven. Test with toothpick in the center to make sure it comes out clean. Cool in pan 10 mins, then turn out to cool completely before slicing. Serve plain or with sweetened whipped cream seasoned with cinnamon.
