Easy Cauliflower Kugel
I like to cook simple recipes with few ingredients that you can make look more impressive in their presentation. This is an easy side to serve on Shabbat for dinner or lunch. Not sure how they freeze as I have never tried. This is adapted from a recipe I found on food.com.

Ingredients
- 1 bag Frozen cauliflower
- 2 large eggs
- 1/4 cup light mayonaise 2 tablespoons
- 1-2 tablespoon onion soup mix
- 1 pinch paprika
Directions
Cook cauliflower in microwave or steam.
Either buy the cut/chopped cauliflower or cut it up or partially mash with a masher after it is cooked. Drain well.
Add onion soup mix and mix well. Add slightly beaten eggs and mayo and mix. Pour into a greased pie plate or pan. Sprinkle with paprika. Bake at 350 for 45 minutes.
I spoon the mixture into cupcake holders to make mini kugels which look more impressive for this simple yummy dish. You just need to adjust the time then and watch until the edges and tops are slightly brown.
