Curried Orange Chicken

This is a variation of a recipe I found on AllRecipes, but they had more ingredients that did nothing to improve the basic taste and ease of preparation

Ingredients

  • chicken parts or boneless cutlets
  • 1 cup reduced sugar sweet orange marmalade
  • 1 tablespoon good quality curry powder

1 Preheat oven to 350F. Mix marmalade and curry powder. Put chicken in pan sprayed with cooking spray. Pour sauce over it and bake: 45 minutes for chicken parts, 20-30 minutes for cutlets. Check for doneness. If sauce starts to stick to the pan, add a bit of water.
2 The original recipe also had salt and water added, but I find that unnecessary.
3 garam masala can be substituted for curry, and you can use either red or yellow curry depending on taste.
