Cucumber and Carrot Salad

This salad is served as an accompaniment to many Thai dishes. It's particularly delicious wtih Peanut Sauce.

Ingredients

  • 1 cup cucumber rounds (1 medium cucumber)
  • 3 Cups bean sprouts
  • 1 cup shredded or julienned carrots
  • 1 green onion, sliced
  • Dressing
  • 1/2 cup Sugar
  • 3/4 cup rice vinegar or white vinegar

Preparation

Preparation

1 Combine vegetables in a bowl. Dissolve sugar in vinegar for dressing and pour over vegetables.
2 Let sit for a few minutes before serving. If you have time, chill salad so flavors can marry.
