Cucumber and Carrot Salad

This salad is served as an accompaniment to many Thai dishes. It's particularly delicious wtih Peanut Sauce.


  • Ready Time : 0 min




  • 1 cup cucumber rounds (1 medium cucumber)
  • 3 Cups bean sprouts
  • 1 cup shredded or julienned carrots
  • 1 green onion, sliced
  • Dressing
  • 1/2 cup Sugar
  • 3/4 cup rice vinegar or white vinegar



1 Combine vegetables in a bowl. Dissolve sugar in vinegar for dressing and pour over vegetables.
2 Let sit for a few minutes before serving. If you have time, chill salad so flavors can marry.

  1. Love this. Made this for Hubby for dinner. Had to taste it first of course. Realized once most of it was gone that I had to make more for dinner,lol. Terrific and usually I cannot stand anything with vinegar. This will be a staple in the Hardy household. Thanks for sharing.
