creamy healthy shepards pie

one of the biggest flaws i found while making traditional sheppards pie was that the potatoes never where creamy enough and the whole dish felt bland but this recipe is so flavorful and SOOOOO creamy youd never know that there was no dairy (or dairy subsitute) inside! oh and its very healthy too!

Ingredients

  • 1 large cauliflower head
  • 1 pound ground meat
  • 2 tblsp oinion soup powder
  • 1 large onion
  • 6 garlic cloves
  • 1 egg
  • Salt and pepper
  • 1/2 c boiling water
  • drizzle of oil

Preparation

Preparation

1 steam or boil the cauliflower till very soft, then food process it untill smooth, salt and pepper and set aside to cool slightly.
2 preheat oven to 350 degrees farenheight
3 in a frying pan drizzle a small amount of oil and saute chopped oinions and garlic until clear, then add ground beef, brown the beef and add salt and pepper.
4 once browned add the 2 onion soup powder mix and stirl well then add 1/2 cup of water and cook until there is only a small amount of liquid left in the pan.
5 grease a baking dish with pam, add egg to cauliflower and mix well, place 1/3 of the cauliflower mix on the bottom of teh baking dish and spread evenly.
6 spread the meat evenly ontop of the cauliflower then spread the remaining cauliflower on top of teh meat.
7 bake at 350 degrees for until golden brown (35-55min)
