Corn Pudding (Corn Kugel)
Parve Version of a corn pudding recipe that I got from a coupon circular, of all places.

Servings
Ingredients
- 2 cans sweet corn I also have used blanched fresh corn,cut off the cob. About 2 cups
- 1 cup soy milk
- 2 eggs lightly beaten
- 3 tablespoons mayo
- 2 tablespoons margarine
- 2 tablespoons sugar If using fresh corn, I found that the recipe doesn't need the extra sugar
- 1 tablespoon flour
- pinch salt
Directions
Preheat oven to 350.
Combine all ingredients, other than corn. Stir in corn. Pour into a well greased 1 quart swallow baking dish.
Bake 1 hour or until golden brown.

i made this recipe this past shabbos using dairy ingredient, fresh corn, and no sugar. i didn’t blanch the corn before cooking. when i make it again, which i will, i’ll blanch the corn, add the sugar, but not cook it quite as long.
i think the mayonaise gives it a good texture. it wasn’t as runny as corn puddings that my family makes.
