Corn Flake Crumb Baked Chicken
This was my grandmother's recipe for breaded baked chicken, she called Southern "Fried" chicken, she dipped in oil, I dipped in egg whites. I added the honey for a little sweetness. It is very simple and reheats well.

Ingredients
- 1 chicken, cut in 1/8ths or 6 skinless, boneless chicken breasts
- 1/4 cup vegetable oil or 2 egg whites
- 4 cups corn flake crumbs
- Salt and pepper and/or garlic powder
- 2 tablespoons honey
Directions
Preheat oven to 350. Spray a 9×13 pyrex with cooking spray.
Clean and dry chicken, remove skin if desired. Rub oil over chicken (or dip in egg whites).
Place corn flake crumbs in a shallow dish with salt and pepper and garlic powder.
Dip chicken the crumbs and place on a greased baking pan. Drizzle honey over top.
Put chicken in oven and bake for 40-50 minutes, until crispy and yummy.

what is pictured along side the chicken? Looks like a baking powder biscuit, made with soy milk
and either oil, or a good quality parve margarine.

yes, it is yellow squash.
One of my favorites. I used to make cornflake crumb chicken with bone-in pieces only, because I thought the boneless breast would dry out – but I’ve learned to stay with the shorter baking time and serve fresh, and the meat stays moist and tender. Kids LOVE this recipe!
To be a bit healthier still, would this work with a higher fiber cereal, like Fiber One?
It would change the flavor of course, but it definitely could work. Let us know if you try it.
