Classic Miso Soup
This is a simple and delicious soup. The Japanese also use miso soup to soothe an upset stomach.

Ingredients
- 8 cups water
- miso soup paste, enough for 8 cups water
- 8 ounce firm tofu, cubed
- 3 fresh mushrooms, sliced
- 3 green onions, diced, plus a few more, for garnish
Directions
Bring water to a boil in a medium-size saucepan. Add miso paste and stir until the paste is fully dissolved. Add tofu, mushrooms, and green onions. Let simmer 3-5 minutes. Serve with a sprinkle of green onions.

Try your local health food store. Check to make sure there is a hechshar (kosher symbol). There are generally two types, Barley and Brown Rice. I like the Barley and SD likes the Brown Rice. Get both kinds and see which one you like.
